Heat olive oil in a large non-stick pan over medium-high flame. Stir in onion and sauté until translucent. Add in chicken, cajun spice, salt, and pepper. Cook until chicken is done while stir-ring occasionally. |

Preheat the oven to 350ºF. |

Lightly grease a baking tray with olive oil spray. |

Remove the top of each bell pepper. Scoop out seeds from bell peppers with a spoon and dis-card them. Stuff the bell peppers with prepared chicken and place them stuffed over prepared tray. Spray some olive oil spray over each bell pepper. |

Bake for 10 minutes. |

Once done, remove the tray from oven and place it over a wire rack to cool down a bit. Serve hot! |
