Fill a small bowl with ice water and add the onion. While you prepare the salad, let the onion soak, to remove some of the bite and crisp it up. |

With a serrated knife, trim the ends from 1 grapefruit so it sits flat on your cutting board. Slice off the peel and pith in a downward motion, leaving just the flesh and membranes. Hold the grapefruit in your hand and cut out the grapefruit segments into a small bowl, until only the membrane remains. Repeat with the remaining grapefruit. Squeeze any extra juice from the membranes into a large bowl. |

Whisk the vinegar and honey into the large bowl with the juice. Season with salt and pepper. Whisk in the oil in a slow, steady stream to make a smooth dressing. Add the grapefruit segments, avocados, and watercress. Drain the onion, pat dry, and add. Toss gently to coat with the dressing, adjust the seasoning, and serve. |
