In a mixing bowl, beat the eggs with the sugar. Add the butter, flour, milk, vanilla, baking powder, lemon zest, pine nuts, raisins and a pinch of salt. Mix well to form a cake batter. |

Butter and flour a cake pan, and pour in the batter. |

Peel the apples and remove the cores. Thinly slice the apples, and arrange on the surface of the batter. |
