¼ cup Maple Syrup

1½ cups hot Water

2 tablespoons active dry Yeast

½ cup Walnut Oil

3 cups brown Rice Flour

1 tablespoon ground Cinnamon

1 teaspoon ground Ginger

½ teaspoon ground Cloves

1 teaspoon Anise Seeds

1 cup Raisins

In a large bowl, combine the maple syrup and hot water. |

When the water is lukewarm, add the yeast; stir until dissolved and let sit until foamy, about 5 minutes. |

Add the walnut oil to the yeast mixture and blend. |

Combine flour, cinnamon, ginger and cloves in a separate bowl. |

Add the flour mixture to the yeast mixture one-half cup at a time until well blended. |

Knead dough for 10 minutes, then roll into a ball and place in a lightly oiled bowl covered with a dishtowel. Place in a warm location and let the dough rise until it doubles in size, about 1 hour. |

Punch down the dough and knead in the anise seeds and raisins. |

Again roll the dough into a ball and place in the lightly oiled bowl, cover with a dishtowel, and let rise for 45 minutes. |

Preheat oven to 350°. |

Punch down the dough and turn onto a flat surface. Divide dough in two equal portions, and place in two lightly greased loaf pans. |

Let rise for 20 minutes or until doubled in bulk. Bake for 40 – 60 minutes, or until golden brown. |
