In a small saucepan bring the agar-agar & apple juice to a boil, reduce the heat; simmer for 10 minutes. |

In a blender or food processor combine tofu, amazake, maple syrup, almond extract, kudzu & coconut; process for 2 minutes or until smooth. |

Pour this mixture into the prebaked pie crust; refrigerate for 1 hour. Serve chilled with fresh fruit. |
