⅓ cup (80 ml) good-quality Olive Oil

1 heaped tbsp (15 g) ground Parmesan Cheese

Directions
There’s an Italian restaurant in our neighborhood that serves the most delicious dipping oil with bread upon arrival. I’m always analyzing it to death, dunking and dipping to determine all of the flavors. This version, which includes both fresh and dried herbs, is as close as I’m going to get. The Parmesan at the bottom of the bowl is the best part. And by the way, if you double the recipe, it can be used as a marinade for chicken and shrimp or to drizzle over roasted potatoes.

Add all of the ingredients to a small bowl, and mix well to combine. Season generously with salt and pepper. Dunk a piece of bread into the oil to taste, and adjust the seasoning as needed. It should be zesty and flavorful. Serve with breadsticks, focaccia, or your choice of sourdough for dunking. |
