For Peach Filling

10 cups of peeled, wedge-cut Peach

1/3 cup of Maple Sugar

2 tbsp Arrowroot

1 tbsp fresh Lemon Juice

1/3 cup of filtered Water

For Topping
-
1/3 cup of each: Tapioca Flour

¼ tsp ground Cinnamon
-
½ cup + 1 tbsp of Maple Sugar

1 tsp Baking Powder
-
12 tbsp cold Unsalted Butter
-
2 large beaten Egg
-
1 tsp pure Vanilla Extract
Directions
Everyone loves peach cobbler, it seems. Juicy, sweet peaches are topped with a buttery, fluffy topping that is a bitcrisp, and it’s a wonderful end to a healthy meal.

Preheat oven to 350F. |

Place peaches in large sized bowl. Remove ¼ of peaches. Chop them up. |

Combine chopped peaches, water, lemon juice, arrow root flour and maple sugar in medium sized sauce pan. Heat on med. while stirring till liquid starts thickening. |

Remove from heat. Pour hot peach mixture on remaining peaches. Stir and combine well. Pour peach mixture into 11x8” baking dish. Set it aside. |

Place baking powder, ½ cup of sugar, cinnamon and flours in food processor. Pulse and combine. Add butter. Pulse 15 to 20 times till pea-sized. |

Add vanilla and beaten eggs. Pulse till moistened evenly. Spoon dough dollops onto peaches. Sprinkle with last tbsp. of sugar. |

Bake for 45-50 minutes till topping begins to turn golden brown. Cool for 15-20 minutes before serving. |
