2 tablespoons hot Salsa

1 dash Black Pepper
Directions
A dairy- free, satisfying omelet packed with fresh veggies and served with a side of spicy, hot salsa.

In a large skillet or frying pan, heat the margarine. When hot, add the potatoes. Sauté until the potatoes are golden and crispy. Next, add the chopped green pepper and red onions to the pan. Continue cooking until the onions are just soft and fragrant; this will take around 3-4 minutes. Remove the pan and put to one side. |

In a medium bowl, whisk the eggs together with the soy milk for 1-2 minutes or until beaten. Return the pan to the stove over medium heat. |

Pour the egg mixture over the potatoes and vegetables and cook until the underside browns and the surface begins to set. Spoon 5-6 spoonfuls of hot salsa on top of the mixture. |

As soon as the omelet has firmed and set, using a spatula gently loosen its edges from the pan and fold the omelet over to make a half moon shape, press the edges of the omelet to seal. |

Transfer the cooked omelet to a plate and season with salt, pepper and a side of salsa. |
