Preheat oven to 350°. Melt butter in a 4-qt. saucepan or Dutch oven over medium-high heat. Add chopped onions and celery; cook, stirring often, 8 minutes or until softened. |

Meanwhile, pick crabmeat, removing any bits of shell. Remove onion mixture from heat; sprinkle with flour, stirring constantly. Gradually stir in milk. Cook, stirring constantly, over medium heat 2 minutes or until thickened. Stir in salt, hot sauce, and pepper. Add crabmeat. |
