Directions
Nothing makes my mouth water more than the thought of rhubarb pie. This crop is typically harvested in the spring and summer months and is something to look forward to during the winter. The result is an amazing dish that combines both tart and sweet into one flavorful package.

Preheat oven to 375 degrees. Mix sugar, flour and salt. Mix in rhubarb and eggs until combined. Pour into pie crust and pinch top crust around edges to seal pie. |

With a wet knife cut small slices in top crust (called air slats) and sprinkle with nutmeg. Bake 50 – 55 minutes until crust is golden brown. |
