In a deep straight-sided skillet, heat 2 inches of oil to 360°F. In a large bowl, whisk together the flour, cornmeal, baking soda, salt, and cayenne. |

In a large bowl, whisk together the egg and buttermilk. Whisk in the flour mixture until just combined; don’t overmix. Fold in the vegetables and herbs. |

Using a soup spoon, drop a spoonful of batter (about 1 tablespoon) into the hot oil. It’s best to fry these in 2 batches so the temperature of the oil doesn’t drop too much (keep the oil between 350 and 360°F. while frying). Fry, flipping once, until golden all over and cooked through, about 4 minutes per batch. Drain on paper towels. Season with salt and serve right away. |
