100 g ground Almonds

45 g desiccated Coconut

½ finely grated Lemon Juice

½ teaspoon pure Vanilla Extract

2½ tablespoons Honey

Line a baking tray with baking paper. |

Place the ground almonds, coconut, lemon zest and juice, vanilla and honey in a bowl and mix until well combined. The mixture should be a little sticky. If it is too thick, add 1–2 tablespoons of water. |

Scoop out 1 heaped tablespoon of the mixture and roll into a ball using wet hands. |

Place the balls on the lined baking tray and refrigerate for 30 minutes. |

To serve, roll through some extra coconut to coat. Store in an airtight container in the refrigerator for up to a week. |
