Heaped 1 cup ground Chicken

9 ounces raw peeled tiger Shrimp

1 teaspoon Salt

1 teaspoon freshly ground Black Pepper

¼ cup chopped Cilantro

¾ cup Water Chestnuts

2 tablespoons Soy Sauce

2 tablespoons finely chopped Scallions

1 tablespoon Mirin

1 teaspoon Sugar

2 teaspoons Sesame Oil

7 ounces Wonton Wrappers

For the Soy Dipping Sauce

¼ cup light Soy Sauce

¼ cup Chinese Rice Vinegar

4 teaspoons toasted Sesame Oil

2 tablespoons finely chopped Cilantro

Mix together the chicken, shrimp, salt and pepper in a bowl. Add all the remaining dumpling filling ingredients, except the wrappers, and mix together. Cover the bowl with plastic wrap and chill 30 minutes in the refrigerator to firm up. |

Put a teaspoonful of filling on the first wonton wrapper, bring up the sides and press them around the filling mixture. Tap the dumpling on a flat surface to make the bottom flat, then repeat the process until you have used all the mixture. |

Put a large pot of water on to simmer, with a steamer insert on top. Put the dumplings into the steamer and cook 5 to 10 minutes until tender and cooked through. |

Meanwhile, mix together all the dipping sauce ingredients in a nonmetallic bowl. |

Serve the dumplings right from the steamer, with the dipping sauce served separately. |
