24 to 36 Toasted Crostini

10 ounces crumbled creamy Blue Cheese

One 8.5-ounce container Figs

1 teaspoon chopped fresh Thyme

8 to 10 very thin slices country Ham
Directions
Blue cheese, sweet figs, and cured ham are a stellar combination. If your cheese is very cold, make it easier to spread by softening it in the microwave for 5 or 6 seconds (let it go past 10 and you’ll have a nuclear meltdown). If the cheese’s flavor is too overpowering for you (sans the goodies on top), add a bit of butter to make it milder (but more gooey). Some like this drizzled with a light honey, but I think it’s superb just like this.

Preheat the oven to 400°F. Line a baking sheet with parchment paper or a silicone baking mat. |

Spread the crostini on the prepared baking sheet. Spread 1 to 2 teaspoons of the cheese atop each crostini, then add a heaping 1 teaspoon of the fig spread, a pinch of chopped thyme, and a folded section of country ham. Bake until the cheese is bubbly and melted, 5 to 7 minutes. Garnish with thyme sprigs, if desired. Serve hot, warm, or at room temperature. |
