Heat 1 tablespoon of the cooking fat in a frying pan on medium heat. When the fat has melted and the pan is hot, add the onion and cook for about 5 minutes, stirring, until soft. Add the garlic and sage and continue to cook for a couple of minutes, until the mixture is fragrant. |

Take the pan off the heat and let the mixture cool. While you are waiting, place the 30 g of coconut flour on a plate. |

When the onion mixture is no longer hot, add it to the minced chicken, along with the 1 tablespoon coconut flour and the salt. Mix well, then form into 12 to 14 patties. Dredge them lightly in the coconut flour on the plate. |

Reheat the frying pan over medium heat, adding more cooking fat if there isn’t any left in the pan. Cook the patties in batches for 10 to 15 minutes per side, until golden brown and completely cooked throughout. |
