1¼ cups Buttermilk
1 large Egg , beaten
1½ cups all-purpose Flour
Kosher Salt
Black Pepper
4 cups Canola Oil
2 Zucchini , halved and cut into spears
½ cup Mayonnaise
¼ cup chopped fresh Chives
¾ teaspoon Seafood Seasoning
Lemon Wedges , for serving

Whisk the buttermilk, egg, 1 cup of the flour, 1 teaspoon salt, and ½ teaspoon pepper in a large bowl. Heat the oil in a large saucepan over medium heat until a deep-fry thermometer reads 350°F. Toss the zucchini in ½ cup of the flour, then coat the zucchini in the batter. Fry, in batches, until golden, 4 to 6 minutes.

Combine the mayonnaise, chives, and seafood seasoning. Serve with the zucchini and lemon wedges.
