Whisk the buttermilk, egg, 1 cup of the flour, 1 teaspoon salt, and ½ teaspoon pepper in a large bowl. Heat the oil in a large saucepan over medium heat until a deep-fry thermometer reads 350°F. Toss the zucchini in ½ cup of the flour, then coat the zucchini in the batter. Fry, in batches, until golden, 4 to 6 minutes. |
