Combine the horseradish, mustard, sour cream, lemon juice, ½ teaspoon salt, and ¼ teaspoon pepper. Reserve half the dressing and set aside. |

Toss the cucumber with the dressing. Divide the watercress and salmon among 6 plates; top with the cucumber and dill. Serve with the reserved dressing, lemon wedges (if desired), and bagel chips. |
