½ pound Italian Sausages links, casings removed
1 tablespoon Olive Oil
¼ cup grated Asiago Cheese (1 ounce)
2 tablespoons Pine Nuts
2 tablespoons chopped sun-dried Tomatoes
2 Scallions , chopped
4 medium Zucchini , halved lengthwise

Brown the sausage, breaking it up with a spoon, in the oil in a skillet over medium-high heat, 5 to 7 minutes. Mix in the Asiago, pine nuts, tomatoes, and scallions.

Hollow out the zucchini and fill with the sausage mixture. Roast at 400°F until tender, 12 to 15 minutes.
