Directions
One unique method commonly used in Chinese cooking is to deep-fry ingredients first and then to finish cooking them using another technique. This is often done in braised and stir-fried dishes, such as this example from the Sichuan region.

For Blanching the Green BeansAdd the peanut oil to a wok and heat over a medium-high flame until the oil just starts to release wisps of white smoke. |

As soon as the smoke appears, drop ½ of the cleaned green beans into the oil; blanch for 1–2 minutes, or until the beans just start to soften. |

Once the beans begin to soften, remove them with a wire basket or strainer, and set them aside to drain. |

Repeat steps 2 and 3 with the second batch of beans, once again straining them when they are tender. When finished, carefully transfer the hot oil from the wok into a suitable container. |

For Stir Frying the Green BeansCombine the cornstarch and cold water to make a slurry, and then add the dark soy sauce, rice wine vinegar, rice wine, and sugar; mix well to combine, and set this aside for the sauce. |

In the now empty wok, add the peanut oil and heat over a high flame until wisps of white smoke start to rise from the pan. |

As soon as the pan starts to smoke, add the ginger and garlic; stir-fry these ingredients for about 10 seconds before adding the blanched green beans to the pan. |

Once the green beans have been added, add the minced chiles; continue to stir- fry these ingredients for another 30 seconds. |

Once the green beans and chiles have been stir-fried for 30 seconds, add the sauce mixture from step 1. |

Continue to cook over high heat until the sauce starts to thicken slightly, and then remove it from the heat (this will happen quickly); drizzle in the sesame oil while tossing the ingredients in the wok together. |
