170 g wholemeal Spelt Flour

1½ tsp blue Fenugreek Seeds

Stir the yeast and maple syrup into 120 ml warm water and set aside until the yeast has dissolved. |

Mix the dry ingredients together and add the yeast and maple syrup mixture. Stir with a wooden spoon until the flour and liquid combine to form a dough. Knead the dough by hand for 10 minutes over a floured work surface. Put the dough into a bowl, cover and leave in a warm place for 1 hour until it has doubled in size. |

Divide the dough into four uniform pieces. Roll each piece into a long sausage and wind it around a wooden stick or bamboo skewer. |

Bake the twists over indirect heat for 15 minutes, turning them over from time to time. |
