Ricotta cream is light and fluffy and so versatile you can use it for almost any dessert. It can also be enjoyed all on its own.

Use a blender to whip ricotta, one cup of whipping cream, and one cup of icing sugar. Whip until peaks form and set aside. |

In a medium mixing bowl, combine 1 - ½ cups of whipping cream and one cup of icing sugar; whip until peaks form. Fold into the large bowl with the ricotta. Refrigerate for two hours. |
