Directions
Onion rings for some evoke nostalgic memories of childhood meals, before we even taste somethings, the anticipation of the influences our eventual enjoyment of the food, which is perhaps why this grown up healthier version of the fried snack is a real crowd pleaser.

Preheat the oven to 220˚C (425˚F) Gas 7. |

Mix the flaxseeds/linseeds with 175 ml/⅔ cup water and set aside. Separately, mix the cornmeal, cracker crumbs, jalapeño, salt, and pepper to taste in a wide bowl. |

Separate the onion slices into rings. Dip them into the flaxseed/linseed mixture, then into the crumb mixture. For each onion ring, do this twice so that they are double-coated. |

Arrange the rings on the prepared baking sheets and bake in the preheated oven for 8–12 minutes until they are slightly browned on the outside and cooked all the way through. |
