Dice 1 cup watermelon and combine in a bowl with cucumber, 2 tablespoons lime juice, and 1 tablespoon sliced scallion. Cover and refrigerate until ready to serve. |

In a blender, place remaining watermelon, yogurt, remaining lime juice, remaining scallion, jalapeño, orange juice, ginger, and salt. Blend until smooth and creamy. Refrigerate about 2 hours, or until chilled. |
