Directions
This squash with sun-dried tomatoes is a wonderful dish for a lighter lunch. A big batch of it goes perfectly with burgers or hotdogs at a cookout and will be great as well with any chicken, beef, pork, or seafood dish you choose.

In a skillet, add olive oil and warm over medium high heat. Saute the onion and garlic for 5 minutes until soft. |

Add the squash, and stir. Cook for another 5 minutes. |

Add the sun-dried tomatoes, and sauté for another 2 to 3 minutes. |

Season with salt and pepper, and serve. |
