Ingredients

3 lb cleaned Mussels

1½ cup dry White Wine

1 lb cubed Yukon Potatoes

1 small chopped Onion

Salt
-
Black Pepper

2 minced Garlic

2 tbsp Lemon Juice

1 tbsp Dijon Mustard

1/3 cup Olive Oil
-
½ tap Thyme
-
3 tbsp chopped Chives
Directions
A very interesting French take on potato salad as it combines the potatoes with mussels. The mussels get added flavor by being boiled in wine.

Place the potatoes in a pot of salty water and boil for 15 minutes or until done. Let cool. |

Clean the mussels thoroughly. |

Place the cleaned mussels in a pot and cover with the wine and water as needed. |

Bring the liquid to a boil. |

Cook for 6-7 minutes, until mussels open. Discard any unopened ones. |

Toss the potatoes, mussels and chopped onions in a bowl. |

Season with salt and pepper. In a small bowl, combine the garlic, lemon juice, mustard, olive oil and thyme. |
