Pasta Carbonara with zucchini recipe

Ingredients

3 medium (400 g) Zucchini
4 tbsp grated Parmesan Cheese
small bunch of fresh Thyme
200 g smoked Bacon
4 PCs Egg yolks
Olive Oil
100 ml fatty Cream
500 g Penne Pasta
Salt , freshly ground black pepper

Instructions Put on the fire a large pan with salted water. When the water boils, stir in pasta and boil it until al dente, according to package instructions. The finished pasta drain in a colander, leaving about two ladle of the water in which it cooked. Prepare the sauce: whisk the egg yolks with a fork, then pour in the cream and add 2 tbsp of grated cheese.

Season with salt, pepper, stir and set aside. Zucchini cut into medium cubes. The bacon chop. In a large frying pan with olive oil fry the bacon until Golden color, 1-2 minutes. Add the zucchini, a couple pinches of black pepper, the thyme leaves. Stir and sauté until soft. Add to the pan of steaming hot pasta and stir.

Then turn off the heat, pour in the pan a ladle of hot water (from pasta) and enter the sauce. Stir quickly and do not expose the pasta to heat, otherwise the egg yolks will curdle. Mixing the pasta with sauce, stir into it the remaining Parmesan. Optionally, you can add the pasta a little more water. The sauce should be velvety and shiny. Try the salt and pepper. Serve immediately, otherwise the sauce will quickly thicken and become viscous.
