2 tablespoons cold Water
2 red Bell Peppers , seeded and finely chopped
1 Garlic clove, finely chopped
1 Onion , finely chopped
1 (14½-ounce) can diced Tomatoes
5 cups Vegetable Broth
Salt
Black Pepper , to taste
fresh Basil leaves, to garnish

This warming and comforting soup is brimming with health-boosting, antioxidant-rich vegetables.

Put the oil, water, red bell peppers, garlic, and onion in a saucepan over medium–low heat and cook for 5–10 minutes, or until all the vegetables have softened. Cover and simmer for 10 minutes.

Add the tomatoes and stock and season with salt and pepper. Simmer, uncovered, for 15 minutes. Serve garnished with basil leaves.
