Ingredients
-
Cooking spray
-
2 (7-oz.) Yukon Gold or russet Potatoes
-
1 Tbsp Olive Oil
-
2 tsp Lemon Zest
-
½ tsp dried Oregano
-
¼ tsp Kosher Salt
-
¼ tsp Garlic Powder
-
¼ tsp Onion Powder
-
¼ tsp Paprika
-
¼ tsp Black Pepper
-
2 oz Feta Cheese
-
2 oz shredded skinless rotisserie Chicken
-
¼ cup prepared Tzatziki
-
¼ cup seeded and diced plum Tomato
-
2 Tbsp chopped Red Onion
-
1 Tbsp chopped fresh flat-leaf Parsley
Directions
This dish gets tons of flavor from the spices. If your fresh oregano is strong, start with less than what’s called for and add more to taste. To speed things up, prep all the ingredients in advance so you can assemble quickly while the fries are still hot. Spread potatoes on an aluminum foil–lined baking sheet; bake 10 minutes at 450°F. Flip fries, and bake until crisp and brown, 10 to 15 minutes.
