1 Celeriac

4 tbsp Apple Cider Vinegar

2 tbsp Maple Syrup

3½ tsp Fennel Seeds

1½ tsp Coriander Seeds

1 tsp coarse Sea Salt

Cut the celeriac into 2 ½-cm-thick slices. Put the slices into a saucepan with plenty of water and bring to the boil. Parboil for 15 minutes over a medium heat. |

Mix the olive oil, vinegar, soy sauce and maple syrup until smooth. Add the still hot celeriac slices to this marinade and marinate for at least 4 hours in the refrigerator. |

Crush all the ingredients for the rub in a mortar. |

Take the celeriac out of the marinade and dredge the slices in the fennel BBQ rub, turning them over and pressing well. |

Grill the steaks over direct heat for 4–5 minutes each side. |
