Mexican breakfast is a meal prepared with several ingredients which are readily available. Serve this meal topped with guacamole and salsa.

In your slow cooker, mix eggs with sweet potato, onion, bacon, mushrooms and red bell pepper, stir a bit, cook for 6 hours on Low while covered.

Divide between plates, top with guacamole and salsa and serve for breakfast. Enjoy!
