6 whole green Cardamom

8 whole Cloves

6½ tablespoons (80 g) Caster Sugar

⅓ cup (100 ml) Apple Juice

1 bottle of White Wine
Directions
As an alternative to traditional gløgg (as they call it in Denmark and Norway), white wine is lovely. It can often taste sour if reheated, so adding a flavour extract to the wine just before serving avoids this problem. Use a glögg extract within a few days of making it.

Place all the ingredients in a pan and bring to the boil. Turn the heat down to low and leave to simmer for about 10 minutes. Turn off the heat, cover the pan and leave to cool for at least an hour (or overnight, if you can). Strain the extract into a sealable container or bottle to remove the spices and store in the fridge until you need it. |

To serve, heat the white wine until hot but not boiling, then add the extract to taste. |
