Peel from 1 Clementines

Directions
Just as the weather turns cold and snowy, the first clementines appear in grocery stores. Sour at first, these grandchildren of the mandarin orange get sweeter and sweeter throughout the winter, hitting peak flavor during the dreariest days of the year. There’s no better time to warm up with a citrusy hot cocoa, and a great way to use up those leftover peels from the fruit.

Combine cocoa powder, sugar, and salt in your favorite cup. Add clementine peel to milk in a small saucepan over medium heat and simmer for a few minutes. Once milk is just shy of boiling, discard peel. |

Add just a few tablespoons of the hot milk into the cocoa mix, and stir into a smooth paste with a wooden spoon. Gradually add the remainder of the milk and continue stirring until fully incorporated. Froth with an immersion blender until creamy and foamy. |
