2 teaspoons Fennel Seeds

1 teaspoon Kosher Salt

⅓ cup Olive Oil

⅓ cup Honey

¼ cup Maple Syrup

2 large Egg White

½ cup golden Raisins
Directions
This simple granola comes together in five minutes and is wholesome enough to eat every morning on top of yogurt, with milk, or by the handful (though take note: this is not a clumpy granola). If you can’t hang with the licorice-like taste of fennel, leave out the fennel seeds and throw in a teaspoon of ground cinnamon instead.

Preheat the oven to 300°F. Line a large rimmed baking sheet with parchment paper. |

In a large bowl, combine the oats, almonds, fennel seeds (if using), and salt. In a medium bowl, whisk together the olive oil, honey, maple syrup, and egg whites. Stir the honey mixture into the oat mixture. |

Pour the mixture onto the prepared baking sheet and use a spatula to spread it out into an even layer. Bake the granola, stirring every 20 minutes or so, until it is deeply golden, 50 to 60 minutes. Let it cool completely in the pan, then stir in the raisins. |

Transfer the granola to an airtight container, where it will keep for at least a week. |
