¼ cup (50 g) Spectrum Organic Shortening

½ cup (125 g) unsweetened Applesauce

½ cup (170 g) Honey

1 teaspoon (5 ml) Vanilla Extract

1½ cups (185 g) Bob’s Red Mill white Rice Flour

½ cup (60 g) Bob’s Red Mill Tapioca Flour

2 teaspoons (9.2 g) Baking Powder

½ teaspoon (3 g) Salt

1 cup (120 g) grated Carrots

½ cup (75 g) sulfite-free golden Raisins

Preheat oven to 375°F (190°C, or gas mark 5). |

Cream together shortening, applesauce, honey, and vanilla with a mixer. Add flours, baking powder, and salt and mix to combine. Stir in grated carrots and raisins. |

Drop dough by rounded tablespoon onto a greased baking sheet. |

Bake for 15 minutes. Remove from baking sheet and let cool on a flat surface. |
